Some Nigerian meals don’t need plenty of ingredients or difficult cooking methods to prepare it.
Ata dindin is one of them. This popular Yoruba pepper stew is known for its rich, deep flavour and the way it instantly changes simple meals into something special.
If you’re looking for a simple homemade stew that is delicious, versatile and perfect for everyday Nigerian dishes, this recipe is worth trying. And, interestingly, you don’t need plenty of ingredients. Even without fresh tomatoes, this stew can be prepared with just the pepper and other ingredients.
IngredientsÂ
For a medium-sized pot of ata dindin, you’ll need:
- Fresh tomatoes
- Ata rodo (scotch bonnet peppers)
- Onions
- Palm oil or vegetable oil
- Ground crayfish
- Seasoning cube
- Salt to taste
- Smoked fish, eggs, ponmo or assorted meat (optional)

Procedures
- Start by washing your tomatoes, peppers and onions. Blend them together, but avoid making the mixture completely smooth. A slightly coarse texture gives the ata dindin a more rustic, homemade feel.
- Pour the blended pepper mixture into a pot and allow it to boil until some of the water evaporates. This step is important because it reduces the amount of time the sauce needs to fry.
- Heat your oil in a clean pot and add some sliced onions. Allow the onions to fry for a few minutes until they become soft and fragrant.
- Add the cooked pepper mixture and stir thoroughly. Season with ground crayfish, seasoning cube and salt. If you’re adding smoked fish, ponmo or assorted meat, this is also a good time to put them in.
- Cook the ata dindin over medium to low heat, stirring occasionally, until the raw taste of the pepper disappears and the oil begins to rise to the top. The longer it cooks gently, the richer and more flavourful it becomes.
- Once the sauce is well fried, taste and adjust the seasoning if necessary.
What Can You Eat Ata Dindin With?
You can serve it with almost anything.
- Boiled yam
- Fried yam
- Boiled plantain
- Fried plantain
- White rice
- Beans
- Bread
You can even keep a batch in the refrigerator and use it throughout the week when you need to put together a quick meal.
Moreso, you also don’t have to make yours extremely spicy. Adjust the amount of ata rodo to suit your taste and the people you’re cooking for.
